Too good to try this stir fry with dal-rice or sambar-rice combination with a pinch of pickle beside.. Hmm I love this recipe for chapathi also. Give it a try, may be you will like it too..
1 Cup Carrot (chopped)
¼ Cup Onions Chopped
½ tsp Chilly powder
½ tsp Dhaniya/Coriander powder
½ tsp Mustard seeds/Avalu
1 tsp Cumin seeds/Jeera
1 tsp Bengal Gram Dal /Pachisenagapappu
1 tsp Black Gram Dal/Minapappu
8-10 Curry leaves/Karvepaku
The procedure is same as cabbage moong dal fry.. Very simple and can be prepared fast..
Heat 4-5 tsp of oil in a pan. Add all the seasoning items one after the other and let them splutter.
Now add onions and cook till they turn transparent. Now add chopped Carrot.
Keep stirring regularly till the carrots turn soft and little crispy.
Now add salt, turmeric powder, chilly powder, dhaniya powder and cook for 2-3 mins.
Tasty carrot vepudu is ready to be served.
